S’mores Cookies
 
A combination of favorite flavors – s’mores + chocolate chip cookies = flavor explosion!  Great for lakeside grilling or tailgating season.  Whip up a batch and enjoy!  This recipe was graciously shared with us by reader Katie Keenan Lee, see bottom for link to where she obtained the original recipe.

INGREDIENTS
 
Graham Cracker Crumble

• 1 pkg Nabisco Honey Maid graham crackers
• 6 T butter (melted)
• 1 T sugar
• dash of salt

Cookie Dough

• 1 cup butter (softened – 2 sticks)
• 1 ½ cups brown sugar
• ½ cup sugar
• 2 eggs
• 2 T milk (we used 3 T)
• 2 t vanilla
• 1 t baking soda
• 2 t baking powder
• ½ t salt
• 3 ½ cups flour
• 1 ½ cups Nestle Toll House milk chocolate morsels chips (we used 2 cups)
• 16-20 large Kraft Jet-Puffed marshmallows (cut in ¼ rounds)
• 16-20 small snack size Hershey bars (broke into ¼s)

INSTRUCTIONS

•  Preheat oven to 350 degrees.
• Crush graham crackers inside a Ziploc bag with a rolling pin (crush crumbs to desired level of coarse or fine).
• Pour crushed graham crackers into a medium bowl, add the melted butter, sugar, & salt and mix together so that all the crackers are coated with the melted butter.  
• In a large bowl, add 1 cup softened butter and sugars, beat until creamy.
• Add eggs, milk, & vanilla and mix again until those are all incorporated.
• In another medium bowl, add flour, salt, baking soda, & baking powder and combine.
• Add flour mixture and graham cracker crumbs to the wet mixture and stir together.

• Gently stir in the milk chocolate chips.
• Scoop 1 inch size balls onto the cookie sheet.
• Bake cookies for about 7 minutes.  (Ours were big, so we baked for 7 -8 mins depending on the average sizes on a sheet.)
• Remove tray from the oven and top each cookie with ¼ piece of marshmallow.
• Place cookie sheet back into the oven to bake for 1 ½ minutes.
• Remove again from the oven and let cool for about 2 minutes.
• Top the marshmallows with ¼ piece of the snack sized Hershey bar.
• Allow to rest for a couple more minutes on cookie sheet before moving to a cooling rack.
• Cool cookies for about 2 hours before sharing (eat much sooner if desired, but chocolate and marshmallow will be softer & gooey-er - we liked them that way!)

The recipe takes about 25 minutes from preparation to full cook time, and serves from 60-80 depending on sizing (ours were big - so the batch made about 45+).  These are a so delicious - a new favorite in our home!  Dig in!
