For a fast paced lake lifestyle, our plan is usually that during the week we try to keep it quick, but make wholesome substitutes in normal recipes to cut calories, fat, and sugars, and other BAD things from our diets so there is less guilt to splurge a little on the weekends for BBQs with friends and neighbors and not fret the expected s'mores around the fire pit. So, below, find a couple of GO TO options for a quick healthy breakfast option. ![]() COFFEE Start with coffee! Trader Joes and Aldi have excellent selections of coffee, either ground or whole bean which can be fresh ground in the store or at home. Skip the cream and sugar, and try lightening up your beverage with some almond or coconut milk instead, or even better, learn to love a great coffee black - naked with no additives, which can help you learn to appreciate the actual test of a really good coffee. ![]() BREAKFAST BURRITO Organic or whole foods are always the best, but try to make choices that align with a pre-planned budget. The following is a great easy recipe for those mornings when everyone just wants to get out the door and onto the lake. INGREDIENTS: 2 eggs (either whole or whites) ¼ cup of milk 1 oz shredded cheese mix (try Sargento's mixes) ¼ cup of spinach leaves (Publix in Cullman AL has a great selection) 1 Tortilla (we used Mission) ![]() DIRECTIONS
Add your choice of bacon, deli meat, or breakfast sausage for a little more protein. 1/23/2018 0 Comments Lakeside Breakfast-Avocado Toast![]() If you are a "breakfast hater" - and have been looking for something nutritious that can help fuel a great day, and get the metabolism moving., then experiment with avocado toast. There are tons of variations of this concoction across Pinterest but after many trials, an ultimate breakfast emerged, the Everything Avocado Toast. It's the perfect morning breakfast full of whole grains, healthy fats and protein. Start out with two slices of a favorite bread. (we prefer sprouted breads, try Aldi). Toast each slice in the toaster (or in the oven if you don't own a toaster). While the bread is toasting, cut up an avocado and start frying the eggs. Put a little olive oil or coconut oil in a frying pan and cook the eggs to taste. Try them sunny side up. The runny yolk adds even more flavor. Once the bread is toasted, add the avocado slices and top each piece of toast with an egg. ![]() Everything Avocado Toast Ingredients: 2 slices of bread (any type or brand) 1 small avocado 2 eggs seasoning mixture (see below) Cilantro Seasoning Mixture 1t dried minced garlic 1t dried minced onion 1t chia seeds Sea salt Black pepper Directions: 1. Toast two slices of bread 2. Slice the avocado 3. Fry two eggs 4. Top toasted bread with avocado and fried egg 5. Sprinkle with season mixture 6. Garnish with cilantro 7. EAT! When the luscious Thanksgiving leftovers have lost their luster, we find another way to continue enjoying the turkey! This recipe is sure to hit the spot! Enjoy! Ingredients:
Steps: 1. Chop the turkey, onion, and peppers. Drain beans. Preheat a large stockpot on medium high for 2-3 minutes. Place oil in pot, then add peppers and onions, cook and stir 2-3 minutes or until tender. 2. Reduce heat to medium. Remove casing from sausage and add sausage to the pot. Cook 5-6 minutes, stirring to crumble or until sausage has browned. 3. Stir in cumin, chili powder, oregano, pepper, beans, and broth; bring to a boil. Reduce heat to low, cook and stir for another 10-15 minutes or until thickened. 4. Stir in turkey and milk; cook 2-3 minutes to blend flavors. 5. It has a wonderful taste, and is a great way to savor the last few days of fall! Apple Cider Margarita Recipe:
Combine the Grand Marnier, tequila and apple cider in a shaker. Next, in a small bowl, prepare the rim mixture by combining the cinnamon and sugars together. Dip the rim of each glass in a bowl of water, then press the rims into the sugar mixture to cling. Carefully place ice into the glasses, and pour the combined beverage, from the shaker, into the glasses over the ice. Garnish with an apple slice and/or cinnamon stick. Steps: 1. Cut cheese into small cubes and set aside. 2. Remove chorizo from casing and brown in a skillet. Drain well. 3. Reduce to medium heat, adding cheeses, milk, and garlic salt. 5. Cook and stir 8-10 minutes or until well blended. 4. Drain corn and rotel, adding both to the mixture. 5. Cook 5 minutes and serve from skillet. 6. This Gameday Log is a go-to, especially if you prefer to make your appetizers ahead of time!
Ingredients:
Mix the taco seasoning, chopped green onions, cooked bacon bits, sour cream, and cream cheese together. Drain the Mexicorn and Rotel, placing in separate bowls. Lay three tortilla wraps flat and spread the mixture across, layering with the drained Mexicorn and Rotel. Roll the tortillas up and wrap in tin foil separately. After refrigerating for two hours, slice and serve. Enjoy! 8/23/2017 0 Comments Lakeside Recipes: Conecuh Bites![]() Preparing for the weekend always entails searching for a recipe. ALWAYS! Whether we have company or not, I always try to include an appetizer for Saturday night for us to munch on while watching the sunset and enjoying the beauty around us {also known as Smith Lake}. One of my go-to's is called Conecuh Bites. Conecuh Bites are easy to make, and, without a doubt, deliciously mix the hearty and the sweet together! If you've never had Conecuh Sausage, and you like sausage, do yourself a favor and pick some up! Conecuh Sausage ships anywhere in the United States or can be found in most grocery stores (I pick mine up at Son's of Arley). Recipe: Conecuh Bites
Grill or fry the Conecuh and cut into serving pieces {see picture for size}. Open the pineapple. Using a toothpick, combine your sausage and pineapple chunks, and dip into the BBQ sauce {I usually use Dreamland Sauce, but recently discovered a new brand, Bully Sauce - that also loves Smith Lake, I should add - and I am planning to use it this weekend}. Side note: for cheese lovers, my Daddy adds a small block of cheddar cheese to his sausage/pineapple combo and claims -- "it makes it THAT much better!" |
