For as long as I can remember I have been a total breakfast hater. Big shocker, right? The thought of waking up to pancakes, eggs and breakfast meats made me absolutely gag.
Luckily, I married a man who felt the same way. We were on the same page of just holding off the food until about 11am and skipping straight to lunch. And for the first few years of our marriage, that's exactly what we did.
Until our two little boys came along. Somehow, two breakfast haters created two little breakfast loving monsters. When I say they love it, I mean they REALLY love it. The average at home breakfast for Cash and Camber consists of LOTS of eggs (they eat about two-three dozen a week) along side bacon, toast or occasionally pancakes. Recently they are loving oatmeal, Greek yogurt and fruit.
I hate to just sit them at the table alone, and my metabolism totally stinks after having the twins, so I went on a journey of finding a breakfast that I could enjoy with them. It had to be something nutritious that would help fuel me for my day - and get that metabolism moving. That is when I started experimenting with avocado toast.
I came across tons of variations across Pinterest and after many trials, I created the ultimate breakfast which I call Everything Avocado Toast.
It's the perfect morning breakfast full of whole grains, healthy fats and protein.
Start out with two slices of your favorite bread. I prefer sprouted breads (I get mine from Aldi). Toast each slice in the toaster (I actually put mine in the oven because we don't own a toaster--told ya we were anti-breakfast).
While your bread is toasting, cut up an avocado and start frying your eggs. Put a little olive oil or coconut oil in a frying pan and cook your eggs to your liking. I always do my eggs sunny side up. The runny yolk adds even more flavor.
Once your bread is toasted, add the avocado slices and top each piece of toast with an egg.
Now here is where the term "everything" comes in. I was really wanting the flavor of an everything bagel, so I made my own little mix. Add dried minced garlic, dried minced onion, sea salt, black pepper and chia seeds to a small bowl and mix it all together.
Garnish with a little fresh cilantro and BAM your delicious, healthy breakfast is ready.
This recipe has been a total game changer for me. I went from hating breakfast and totally skipping it, to actually looking forward to it every morning.
Everything Avocado Toast
2 slices of bread (any type or brand)
1 small avocado
1t dried minced garlic
1t dried minced onion
1t chia seeds
1. Toast two slices of bread
2. Slice the avocado
3. Fry two eggs
4. Top toasted bread with avocado and fried egg
5. Sprinkle with season mixture
6. Garnish with cilantro
